Your knife is your best friend in the kitchen, and knowing how to use it properly will allow you to cook more quickly, with less mess, and have more fun doing it. This course will cover the theory and practice of essential knife skills, to get you cooking like a professional in your home kitchen. It's like culinary school for your real life!


Week 1: Meet your knife. (60 mins.)

  • Knife anatomy

  • Choosing the best knife for you

  • How to hold your knife

Week 2: Know you knife. (60 mins.)

  • Poster + body mechanics

  • Cutting surfaces

  • Hand placement, knife safety and dos + don'ts

Week 3: Use your knife.* (90 mins.)

  • Slicing, chopping, mincing, dicing + more

Week 4: Love your knife.* (90 mins.)

  • Knife care + maintenance

  • Honing + sharpening

* Students should bring their favorite knife to class on 8/23 and 8/30.
